Ingredients

Scale
  • 1 cup coarsely ground coffee beans
  • 4 cups cold filtered water
  • 1/2 cup granulated sugar
  • 3 tablespoons unsalted butter, cut into pieces
  • 1/4 cup heavy cream (room temperature)
  • 1/2 teaspoon sea salt or flaky salt (plus more for garnish)
  • 1 cup prepared cold brew coffee (per serving)
  • 1/2 cup whole milk or milk of choice (chilled)
  • 23 tablespoons salted caramel sauce (adjust to taste)
  • Ice cubes (a generous handful)
  • 1/2 cup heavy cream (chilled, for whipped cream)
  • 1 tablespoon powdered sugar (optional, for whipped cream)
  • 1/2 teaspoon vanilla extract (optional, for whipped cream)
  • Extra caramel drizzle (optional garnish)
  • Pinch of flaky salt (optional garnish)
  • Chocolate shavings or espresso powder (optional garnish)

Instructions

  1. Combine 1 cup coarsely ground coffee beans and 4 cups cold filtered water in a large jar or pitcher. Stir gently, cover, and let steep in the fridge for 8-12 hours.
  2. Strain cold brew through a fine mesh strainer or cheesecloth into a clean jar. Discard grounds.
  3. In a small saucepan, heat 1/2 cup granulated sugar over medium heat, stirring gently until melted and amber colored (about 3-4 minutes).
  4. Add 3 tablespoons unsalted butter and whisk until melted.
  5. Slowly pour in 1/4 cup heavy cream, whisking until smooth. Stir in 1/2 teaspoon sea salt. Let cool slightly.
  6. In a cold bowl, combine 1/2 cup heavy cream, 1 tablespoon powdered sugar, and 1/2 teaspoon vanilla extract. Beat with hand mixer until soft peaks form.
  7. Fill a tall glass with ice cubes. Pour 1 cup cold brew coffee over ice.
  8. Add 1/2 cup milk and 2-3 tablespoons salted caramel sauce. Swirl well.
  9. Top with a generous dollop of whipped cream.
  10. Drizzle with extra caramel sauce and a pinch of flaky salt. Add chocolate shavings if desired. Serve immediately.

Notes

Make cold brew and caramel sauce ahead for quick assembly. For dairy-free/vegan, use oat milk and coconut cream. Adjust caramel and milk to taste. Whipped cream can be made a few hours ahead and kept chilled. For a mocha twist, add cocoa powder to caramel. Caramel sauce deepens in flavor after a day or two.
