Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until crumbs are evenly coated and resemble wet sand.
  2. Press the crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for about 10 minutes.
  3. In a large bowl, beat softened cream cheese with an electric mixer until smooth and fluffy, about 2-3 minutes.
  4. Mix in powdered sugar and vanilla extract until fully combined.
  5. Gradually add thawed lemonade concentrate, beating on low speed until smooth and glossy.
  6. Gently fold in thawed whipped topping using a spatula, keeping the mixture light and airy.
  7. Pour the filling into the chilled crust and smooth the top with a spatula. Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight.
  8. Before serving, garnish with lemon slices or zest and fresh mint leaves.
