Instructions

  1. Toast the nuts: Heat a small skillet over medium heat. Add pine nuts or walnuts and toast, stirring frequently, until golden and fragrant (about 3-5 minutes). Remove from heat and set aside to cool.
  2. Prepare the creamy base: In a medium bowl, combine Greek yogurt and softened cream cheese. Blend until smooth and creamy. Stir in minced garlic, fresh lemon juice, and season with salt and pepper. Adjust seasoning to taste.
  3. Chop the veggies: Halve cherry tomatoes, dice cucumber, chop roasted red peppers, and finely mince red onion. Add all veggies to the creamy base bowl. Toss in fresh parsley and chives.
  4. Combine and fold: Gently fold the veggies into the creamy mixture until evenly coated, keeping tomatoes and cucumber intact for texture.
  5. Assemble the bowl: Transfer the creamy veggie mix to a serving bowl. Sprinkle toasted nuts and crumbled feta cheese evenly on top. Drizzle with extra virgin olive oil and finish with fresh cracked black pepper.
