  • 1/4 cup (60ml) simple syrup (or honey, agave, or maple syrup; adjust to taste)
  • 1/3 cup (80ml) heavy cream or coconut cream (use coconut for dairy-free/vegan)
  • 1 cup (240ml) club soda or sparkling water
  • 1/2 cup (120ml) whipped cream (store-bought or homemade)
  • Maraschino cherries or fresh cherries (for garnish)
  • Vanilla sugar or almond slivers (optional, for garnish)

Instructions

  1. Prep the cherries: Pit and rinse fresh cherries, or thaw frozen cherries for 5 minutes. Add cherries to a blender.
  2. Blend the base: Add cherry juice, lemon juice, vanilla extract, almond extract, simple syrup, and heavy or coconut cream to the blender. Blend on high until smooth and creamy (about 45 seconds). If too thick, add a splash more juice or cream.
  3. Strain (optional): Pour the blended mixture through a fine mesh strainer into a pitcher for a smoother texture.
  4. Chill: Refrigerate the pitcher for 5 minutes while you whip the cream. Alternatively, add ice cubes to chill quickly.
  5. Whip the cream: In a chilled bowl, whip 1/2 cup heavy cream or coconut cream until soft peaks form. Sweeten with vanilla sugar if desired. Store-bought whipped cream is fine.
  6. Assemble: Fill tall glasses halfway with ice (optional). Pour the cherry vanilla mocktail base to fill 3/4 of each glass. Top with a splash of club soda or sparkling water (about 1/4 cup per glass).
  7. Add whipped cream: Spoon or pipe whipped cream over the top. Garnish with maraschino or fresh cherries, and sprinkle with vanilla sugar or almond slivers.
  8. Serve: Serve immediately while cold and creamy.

Notes

For dairy-free or vegan, use coconut cream and non-dairy whipped topping. Skip almond extract for nut allergies. The mocktail base can be made ahead and chilled for up to 2 days; add club soda and whipped cream just before serving. Taste and adjust sweetness as needed. Frozen cherries work well and blend smoothly. For a slushy version, blend with ice. Garnish with vanilla sugar or almond slivers for a fancy finish.
