  • 45 medium fresh peaches, peeled, pitted, and sliced
  • 1/4 cup (50 g) brown sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter, cut into small pieces
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)
  • Creamy vanilla ice cream, for serving

Instructions

  1. Make the crust: In a large bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and cut into the flour using a pastry cutter or food processor until mixture resembles coarse crumbs with pea-sized bits of butter.
  2. Slowly add ice water, one tablespoon at a time, mixing gently until dough just comes together. Avoid overworking. Wrap dough in plastic wrap and chill for at least 30 minutes or up to 2 hours.
  3. Prepare the filling: In a medium bowl, combine sliced peaches, brown sugar, lemon zest, cinnamon, vanilla extract, and flour. Toss gently to coat.
  4. Roll the dough: On a lightly floured surface, roll chilled dough into a roughly 12-inch circle about 1/8 inch thick. Transfer dough to a parchment-lined baking sheet.
  5. Assemble the galette: Spoon peach filling onto the center of the dough, leaving a 2-inch border. Dot filling with small pieces of butter. Fold edges of dough over filling, pleating as needed to create a rustic edge.
  6. Brush crust with egg wash and sprinkle coarse sugar on top.
  7. Bake: Preheat oven to 400°F (200°C). Bake galette for 35-40 minutes until crust is golden and peaches are bubbling. Tent with foil if crust browns too fast after 30 minutes.
  8. Cool and serve: Let galette cool for 15-20 minutes before slicing. Serve warm topped with creamy vanilla ice cream.

Notes

Keep ingredients cold for a flaky crust. Avoid overmixing dough. Use ripe but firm peaches. If peaches are very juicy, place a baking sheet below to catch drips. Chilling dough well is key.
