  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1½ cups (360ml) milk (whole milk preferred)
  • 2 large eggs, room temperature
  • 4 tablespoons (56g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup (100g) packed brown sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons (42g) unsalted butter, melted
  • 8 slices bacon, cooked and roughly chopped
  • ½ cup (120ml) maple syrup
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) milk

Instructions

  1. Cook the bacon: Heat a skillet over medium heat and cook 8 slices of bacon until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain and chop roughly once cooled.
  2. Preheat your oven to 350°F (175°C).
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, granulated sugar, and salt until well combined.
  4. Prepare cinnamon sugar: In a small bowl, stir brown sugar with ground cinnamon and melted butter until it forms a spreadable paste.
  5. Combine wet ingredients: In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until smooth.
  6. Make the batter: Pour the wet ingredients into the dry mix and stir gently until just combined, leaving some lumps.
  7. Layer the bake: Lightly grease a 9×13-inch baking dish. Pour half the pancake batter evenly into the dish. Dollop half the cinnamon sugar mixture over the batter in small spoonfuls, then swirl gently with a knife or skewer. Sprinkle half the chopped bacon over this layer. Repeat with remaining batter, cinnamon sugar, and bacon, swirling and layering as you go.
  8. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  9. Make the maple glaze: While baking, whisk together maple syrup, powdered sugar, and milk until smooth. Adjust thickness by adding more milk if needed.
  10. Once baked, drizzle the warm pancake bake generously with the maple glaze. Let it sit for a few minutes before slicing and serving warm.

Notes

Do not overmix the batter to keep pancakes fluffy. Swirl cinnamon sugar gently to create gooey pockets without blending completely. Use thick-cut bacon for best texture. Tent with foil if top browns too fast. Can be assembled the night before and baked in the morning.
