Cozy Honey Butter Glazed Carrots Recipe with Fresh Thyme

A quick and easy side dish featuring tender carrots glazed in a silky honey butter sauce with fresh thyme, perfect for cozy dinners and crowd-pleasing meals.

  • 1 pound fresh carrots, peeled and cut into sticks or rounds
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves (about 34 sprigs)
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Peel and slice 1 pound of carrots into sticks or rounds about 1/4 to 1/2 inch thick.
  2. In a large skillet over medium heat, melt 2 tablespoons of unsalted butter until foaming, about 1-2 minutes.
  3. Add 2 tablespoons of honey and stir gently until combined and bubbling, about 30 seconds.
  4. Toss the carrots into the pan with the honey-butter mixture. Sprinkle 1 tablespoon of fresh thyme leaves over and stir to coat all pieces well.
  5. Cover the pan and cook over medium-low heat for about 10-12 minutes, stirring occasionally to prevent sticking and to turn the carrots for even glazing.
  6. Remove the lid, season with a pinch of salt and freshly ground black pepper to taste. Add 1 teaspoon of lemon juice if desired.
  7. Cook uncovered for another 2 minutes to thicken the glaze slightly and caramelize the edges.
  8. Check for doneness by piercing the carrots with a fork; they should be tender and coated in a glossy glaze. If needed, add a splash of water and cover for 1-2 more minutes.
  9. Transfer to a serving dish and garnish with extra thyme sprigs if desired. Serve warm.

Notes

Use fresh thyme for best flavor; dried thyme can be substituted but is less aromatic. Cook on medium-low heat to avoid burning the glaze. Add a splash of water if the pan becomes too dry. For a vegan version, substitute butter with vegan margarine or coconut oil and honey with maple syrup.
