  • 1 cup granulated sugar
  • 1/2 cup vegetable oil or melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk or plain yogurt (dairy-free if needed)
  • 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Toss the diced apples with lemon juice in a small bowl to prevent browning. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the eggs and sugar until pale and thick. Add the oil (or melted butter) and vanilla extract, mixing until smooth.
  4. Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry. Fold gently with a spatula to keep the batter light.
  5. Fold the lemon-coated apples into the batter, making sure they’re evenly distributed without overmixing.
  6. In a small bowl, mix the brown sugar, cinnamon, and melted butter until combined.
  7. Pour half of the batter into the greased loaf pan. Spoon half the cinnamon swirl mixture over the batter, then gently swirl with a butter knife. Repeat layering with the remaining batter and cinnamon swirl.
  8. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes. Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use fresh, firm apples for best texture. For gluten-free, substitute flour with a 1-to-1 gluten-free baking flour blend. For vegan, replace eggs with flax eggs and use coconut yogurt instead of buttermilk. Tent with foil if top browns too fast. Let bread cool completely before slicing for clean cuts.
